This guide is threaded onto the spine of the blade, thereby raising the center of the spine about 9 mm above the grindstone. The sharpening angle is thus determined by the height of the blade (distance from spine to edge).
A knife blade height (from edge to spine where the angle guide is attached) of 35mm gives an angle of about 15 degrees. Height 20mm - about 27 degrees and height 55mm - about 9.5 degrees.
